New head chef Jason Thayer, 43, comes to Allen Park with 23 years of experience. A graduate of the Paul Smiths College in Brighton, N.Y., Thayer has had a lifelong interest in culinary arts that began from watching his grandmother cook Italian family-style dinners. Thayer comes to Rumkins with a bevy of experience as a chef at Walt Disney Resorts, which he said gave him the opportunity to work with many world-class chefs. While there, he helped to open several restaurants within Disney, including Flying Fish Cafe and Citricos. Rumkins, at 6736 Allen Road, currently features sandwiches, wraps, salads, soups, burgers, steak and chicken entrees. Special dishes include Rumkins chicken, which is grilled chicken topped with a mojito marinade, and Rumkins bar burger, which is basted in rum butter with cheddar cheese, barbecue sauce and onion straws. The restaurant also offers several specialty rum drinks in honor of the bars namesake. Thayer said he is slowly making changes to the restaurants menu to offer a more Caribbean flair to pair alongside items hes already added, like Rumkins chicken and buffalo chicken wontons.
